RASPBERRY GLAZED CROISSANTS

These beautiful croissants are glazed post-bake with a raspberry glaze then quickly dried in a low temperature oven. They are garnishe with freeze-dried raspberry powder.

    I made your croissants from the Modern Cafe, it's truly the best and most forgiving recipe I've tried. I have a question about the amount of butter in the detrempe, there's a lot more in it compared to other recipes (some don't even have any in it!). Why is this so, and how come they both work even though it is so different? Thank you chef, look forward to your reply.
